Just in case you thought the Leftover Chicken FajiTacos shown in yesterday’s article on using leftovers looked good, we’ve got the recipe for you.
Let’s start with the ingredients you’ll need:
- Leftover ground chicken (or beef), seasoned
- Flour tortillas, 6 inch
- Shredded cheddar cheese
- Leftover refried beans
- Onion, red
- Garlic, fresh
- Jalapeno pepper (optional)
- Olive oil
After gathering your ingredients, over medium heat, warm a tablespoon of olive oil in a large skillet. While the skillet is warming, lay out the flour tortillas. As soon as the oil is ready, add sliced tomato, sliced red onion, minced garlic and if desired, minced jalapeno pepper.
To begin preparing the fajiTacos, spread leftover refried beans over one half of each of the flour tortillas. Add a thin layer of shredded cheddar cheese followed by a tablespoon of the leftover ground chicken. As soon as the vegetables are tender and slightly charred, add a tablespoon or two to each of the in progress fajiTacos. Be sure to layer the mixture directly onto the top of the chicken. Finally layer a little more shredded cheddar over the vegetables, fold the unprepped side of the tortilla over the filling and add to already warmed skillet.
Cook over a medium low heat til the the tortilla is lightly browned, flipping then to ensure the other side crisps, the filling warms and the cheese melts.
